When a tray filled with your mom’s famous chocolate chip cookies is being passed around, it can be difficult to resist the urge to binge out on the buttery, sugary treats. But we’ve got a simple solution: next time you’re going to a family gathering, whip up these ginger-molasses cookies and add them to the mix for a lower calorie (but still melt-in-your-mouth) cookie option.
These cookies don’t skimp on flavor, thanks to yummy ingredients like cinnamon, cloves, nutmeg, and both ground and crystallized ginger. Molasses adds subtle sweetness, giving these treats less of the refined sugar you usually find in cookies. And at only 61 calories each, they won’t leave you feeling guilty (in other words, go ahead and grab a second helping!).
To make these ginger-molasses cookies, prepare our basic cookie dough recipe. In step two of the recipe, you’ll combine the ground ginger, ground cinnamon, ground nutmeg, ground cloves, and crystallized ginger in with the other dry ingredients. Next, you’ll add molasses at the same time as the egg whites and vanilla extract in step three, mixing until everything is combined. Form the dough into small balls and roll them in the granulated sugar. Finally, place the balls on a baking sheet, flatten slightly, and bake for 15 minutes or until the cookies begin to slightly brown on the top.
